Can we use any wallet UI software along with Multichain, to view assets?

Not yet, no. You can try the MultiChain Explorer which is still under development.

Installing this was not so simple :) After a lot of testing I got a working Docker image with an installed Explorer and configurated to connect to the local chain. Should be easy to adapt to your own needs: https://hub.docker.com/r/kunstmaan/explorer-multichain/
