what is the maximum size of the data that can be stored in a stream?

The maximum size of any individual piece of data is 64 MB, if the blockchain parameters are configured appropriately. (Using the default parameters when creating a blockchain, the limit is 2 MB.)

There is no meaningful limit on the total amount of data that can be stored in a stream – it depends on the hard disk capacity of each node. We've tested it successfully past 1 TB.
