Number of nodes

How many nodes do you suggest we use for testing to get the most-stable/best-performance system? we started with 3 nodes and now we have option to make 12 completely seperate nodes on separate servers but im wondering what should be the number we use to get realistic results. I saw that default number of peers for each node is 25 is that the minimum you would recomend or can we go with less or do we need more?

There should be no scalability issue with the number of nodes, since this is a peer-to-peer network where each node is connected to a limited number of peers. Having more nodes also doesn't help general blockchain performance either. Rather, the idea is to have each node run in one of the organizations which is using the blockchain.
